What I cooked....


This past week I had classes Monday-Thursday from 5-8. I was tired most of the week and my girls mainly ate sandwiches, left overs and take out!

I making up for it by cooking all weekend....
Here are the few dishes that I manage to cook last week...




I made this big 'ol salad for me to eat before my class
and to take to work for my next day lunch.




My Mami, makes a killer soup from scratch. I cut corners and
used a low sodium canned noodle soup!
I add vegetables and few spices.

This night, I decided to make a very green wrap!
Delicious MorningStar garden veggie patties.




I seasoned them with garlic power, 
 garlic cloves, gourmet spices blend and a bit of apple cider vinegar.
I cooked them in a small amount of olive oil.

to serve vegetables.




Love mozzarella cheese!
During the years that I was a vegan it was very 
difficult for me to not have any cheese or fish. My body used
to crave both of them.
Growing up we always ate cheese with bread,
we fried white cheese and cooked it with smash or fried green plantains.

flavors very easily!




Cut the patties into smaller pieces before serving them.




Salsa, medium hotness! I prefer the hottest salsa 
but my girls prefer the medium one.

Your food always looks so delicious! How long were you a vegan...and why did you stop? I love those morningstar patties!

Terri, I was a vegan for about 2 years and a vegetarian for about 4.
I stopped because of my cravings for eggs, cheese and fish!
