The week in food and much more...

It's been a while since I post some of our dinners!

During the week all of us eat lunch at school and during the weekends I usually cook 2 meals per day. I always believe that eating together as a family is of the most importance. We try to eat, talk and spend time together at the table as often as we can. We are very lucky to have the opportunity to be here in Florida, be healthy and have all of our basic needs taking care.

Even though I don't take myself too seriously; I take my parent role very seriously. And as a single parent my resources are scatter into many parts and every penny counts! Sometimes, I'm overwhelm with bills and the responsibility of an entire household and of my children well being and care!  However  in lei of what's going on, so many families are dealing with so much more!

So I put a smile of my face, play some of my rock music and cook!!!


First - Some of my market, supermarket and local store buys:



                                          Boil spicy peanuts, coconut, oranges,
                                             apples, cilantro, grapes...



I confess-my-love for broccoli and cilantro!!!



White rice and black beans. 
I made red beans for me in another pot
but forgot to take a picture!



Organic chicken, cook with cumin,
pepper and piles of garlic!



Three different salads; 
we ended up mixing all of them together into a bigger plate!

I love anything that MorningStar sells!


These are breakfast patties but
I cooked them for dinner all the time!


This is the curry I bought last month at the
Yellow and Green Market.
Garlic;  I can't cook without garlic or garlic powder!



I'm glad I ate dinner before posting 
because this photo is making me hungry!!



Loads of vegetables! 
I fried them for about 3 minutes
with olive oil and apple cider vinegar.


Before been devoured!!!



Ingredients!!!!


I soaked my vegetables in warm water and vinegar. 


With little garlic and flash!


With tons of garlic, 
dry cilantro and no flash!



Another abundance of steamed vegetables!



White rice...


Organic chicken with sofrito sauce!!!!

Your meals look soooo good. I'm going to have to do more cooking if I want to drop a few pounds. Snacking all the time doesn't work.

There's so much colour in everything you cook, it all looks so delicious. Even as a vegetarian you have me salivating over your meals. I've never heard of frying vegetables in cider vinegar, I'm definatly giving that a try. xxx

Vix, I'm glad that you find my food "attractive" even though you are a vegetarian!!!
Fry the vegetables with olive oil and apple cider vinegar!
